Mauritian chicken curry recipe

There are many activities to choose from, including dining with locals to sample the unique flavours of the island. Every Mauritian family has a special chicken curry recipe. Try this tasty dish recommended by Chef Murugan of Zilwa Attitude Resort and Spa.

Taste of Mauritius – Chicken Curry 

Ingredients:

6 chicken thighs – (cooked traditionally on the bone)

1 small sliced onion

Salt and pepper to taste

Chopped thyme leaves

½ tbsp. Ginger paste and garlic paste

Chopped coriander leaves

4 chopped spring onions

3 chopped tomatoes

2 tbsp. Curry powder

3 tbsp. Oil

Water

Method:

De-bone the chicken thighs. Heat your saucepan or wok and add curry powder to the oil. Then add the chicken until browned. Put aside. Add two tablespoons of oil to the same saucepan and add onion and thyme and sauté for two minutes. Add a little water to create a paste and then drop in the ginger and garlic paste, then the chicken and cover the saucepan until the chicken is tender. Garnish with coriander and spring onions.
