From the iconic Singapore Sling to a refreshing Dawa, taste signature cocktails from around the world.
Singapore Sling – Singapore
Created at Raffles Hotel’s Long Bar in 1915, during a time when it was considered improper for women to consume alcohol in public, bartender Ngiam Tong Boon crafted a drink that gave the appearance of juice but the potency of a martini.
Ingredients:
25ml gin
15ml cherry liqueur
7.5ml Dom Benedictine
7.5ml Cointreau
120ml pineapple juice
15ml lime juice
10ml Grenadine
A dash of Angostura bitters
Method:
Add all ingredients into a cocktail shaker with enough ice to fill about two thirds of the shaker. Cover and shake hard and fast until the container feels cold. Fill a hurricane glass with ice, then strain the cocktail over the ice. Garnish with a slice of pineapple and cherry.

Old Fashioned – Louisville, Kentucky
First created in Pendennis Club by master distiller and club member, James E. Pepper, this sweet bourbon drink is now the official cocktail of Louisville. Try it at Bourbon’s Bistro – an official stop along the Urban Bourbon Trail.
Ingredients:
50ml Kentucky bourbon
1 tsp sugar syrup
½ slice of orange
1 cherry
2 dashes of Angostura bitters
Method:
Muddle the Angostura bitters, syrup, orange and cherry in an Old Fashioned glass. Remove the orange rind, add the bourbon and fill with ice, then garnish with another cherry and orange slice.
Dawa – Kenya
Swahili for medicine, the Dawa is said to cure all ailments. First introduced to Kenya in the 1980’s, it’s the perfect sundowner after a day of safari.
Ingredients:
50ml vodka
1 tbsp honey
1 tsp brown sugar
1 lime, quartered then cut into chunks
Crushed ice
Method:
Muddle the lime chunks, honey and sugar in a glass, just enough to release the lime juice. Add the crushed ice and vodka and stir to combine the ingredients. Garnish with a lime wheel.
The Hangovertini – Thailand
The film location of The Hangover II, the Tower Club at Lebua in Bangkok created this mind-blowing cocktail for the cast and crew of the film to enjoy. Try yours at the Sky Bar.
Ingredients:
25ml Chivas scotch whisky
25ml Zen green tea liquor
8.5ml Sweet Vermouth Martini Rossi
30ml green apple juice
5.5ml rosemary infused honey
Method:
Fill a shaker with ice then add all ingredients. Shake then strain into a chilled martini glass. Garnish with a sprig of rosemary.
Bahama Mama – The Bahamas
This rum punch is a classic Caribbean favourite, but its origins have disappeared in the annals of history – however every Caribbean island has its own signature drink and the Bahamas is no different.
Ingredients:
25ml coconut rum
50ml pineapple juice
6.5ml coffee liqueur
50ml orange juice
12.5ml dark rum
6.5ml over proof white rum
A dash of Grenadine
Method:
Place all ingredients and ice cubes into a cocktail shaker. Shake twice and strain into a hurricane glass. Garnish with a cherry and orange slice.
Sea Dew – Maldives
With the launch of the Maldives’ first gin bar at OZEN by Atmosphere at Maadhoo, the Sea Dew has been created exclusively for Hayes & Jarvis guests.
Ingredients:
Freshly cut cucumber slices
Fresh rosemary sprig, pulled from the stem
Ice cubes
45ml Hendricks Gin
Method:
Add all ingredients into a shaker and slowly stir, then strain into a martini glass. Peg a rosemary sprig to the glass, spritz with Absinthe and lightly flambé.
